I love making truffles they taste delicious and give a fantastic result. Making truffles is always a favourite with my children especially at Christmas when they make little gift boxes filled with their handmade chocolate truffles for their grandparents. The recipe below creates a stunning looking truffle, the contrast of the dark chocolate colour with the vibrant green of the pistachio, superb.
INGREDIENTS
- 400g milk chocolate, chopped
- 150ml pot double cream
- tsp vanilla extract
- cocoa powder for rolling
- about 80g shelled pistachios, chopped, for rolling
METHOD
1. Melt the chocolate and cream together in 20-second blasts in the microwave or in a glass bowl set over a small pan of simmering water. Dont over cook the chocolate or it will result in a dry mixture. Instead remove the chocolate mixture from the heat when about 80% of the chocolate has melted and simply stir the mixture until the rest of the chocolate has completely melted.
2. Stir in the vanilla, then pour into a bowl. When the mixture is cool, pop in the fridge to chill for 2-3 hours.
3. When firm, use a melon ball-er or 2 teaspoons to scoop out and form balls. Roll each truffle in either the cocoa powder or the chopped pistachios. Keep them chilled until ready to devour
