Healthy Dark Chocolate

Is Dark Chocolate really good for you?

In a nut shell YES dark chocolate is good for you. The antioxidants found in dark chocolate are through the roof when compared to other foods.  A measure of antioxidants in food is the ORAC, and dark chocolate levels are off the chart!

Take a look at some of these well know antioxidant boosting foods.

Taking on board all I have learned about the benefits of dark chocolate and armed with this list of super foods I came up with this antioxidant rich muffin! I must admit that these muffins will contain protein but still with the benefits of high antioxidant ingredients, there must still be some goodness there.

dark chocolate blue berry muffin
INGREDIENTS:

150g plain flour
50g caster sugar,
½ tsp baking powder
pinch of salt
1 tbsp cocoa powder
1 egg , beaten
50g melted butter or canola oil
100ml milk
75g blueberries
75g dark chocolate roughly chopped

METHOD:

1. Preheat the oven to 200C, and prepare your muffin tin with paper cases.
2. In a bowl mix together all the dry ingredients.
3. Mix the wet ingredients into the dry ingredients.  Don’t over mix the batter it should still be a little lumpy.
4. Divide the mixture into your muffin tin and bake in the oven for 25mins.
